Dans un bol, versez la farine de sarrasin et la poudre d'amandes. Ajoutez la levure, le bicarbonate de soude, le sel et les carottes râpées. Versez l'Assaisonnette La Provençale, ajoutez les trois oeufs rapidement battus, les tomates coupées en petits quartiers et les lardons. Mélangez rapidement le tout.
Versez la pâte dans environ 10 moules à muffins ou à cupcakes.
Enfournez la préparation pour 25 à 30 minutes. Surveillez la cuisson en enfonçant la lame d'un couteau dans un des muffins. Si elle ressort sans trace, ils sont cuits !
